In a large bowl, add and combine well:

2 eggs
1/2 cup oil
1 cup milk
1 tsp vanilla

In a smaller bowl, combine well:

1 3/4 cup all-purpose flour, unsifted
1/2 cup sugar
1/4 cup pure cocoa
1 tbsp baking powder
1/2 tsp salt
1/2 cup peanut butter

Combine wet and dry mixtures and fold together gently until just mixed. Spoon into prepared pan. Bake at 200 C (400 F) for 20 minutes. Remove from pan and cool on rack. Makes 10 medium-sized muffins.

For an even richer chocolate flavour, use two tablespoons of semi-sweet liquid baking chocolate (available in a tube) and increase all-purpose flour to two cups.

Try substituting semi-sweet chocolate chips for the peanut butter for Chocolate Chocolate Chip muffins. Cool muffins before riding to solidify exposed chocolate chips, which may melt on your jersey.

To reduce body resources wasted in digesting fat on the road, try substituting substitute 1 banana and 1/2 cup nonfat yogurt for the oil and eggs.

Nice chocolate peanut butter flavor. Could use more sweetness(maybe honey instead?) and some crunch(maybe chocolate chips) but yumm:)
